Festive Shortbread Bites


I love baking way too much during Christmastime...

If you love baking and are in an overly festive mood like me, these mini shortbread bites are the PERFECT afternoon bake! Shortbread is so easy to make as it literally only needs 4 ingredients! So get out your festive cookie cutters and lets get baking!

PREP TIME: 10 minutes

CHILL TIME: 1 hour

COOK TIME: 20 minutes

YOU WILL NEED:

300g plain flour

200g softened butter

100g caster sugar

A few drops of vanilla extract

Festive cookie cutters (I used mini ones, but you can use normal sized cookie cutters to make larger shortbread shapes!)

METHOD:

First, rub together the flour and butter with your hands until it is all crumbly. Then, stir in the caster sugar and vanilla extract. Then, with your hands, form the dough together in a ball and wrap this up in cling film.

Pop this in the fridge to chill for an hour.

Preheat the oven to 130°C. Then flour your surface lightly. Roll the dough out and use your cutters to make whatever shapes you like! Arange the shortbread bites on a baking tray and place in the oven for 20 minutes until they are pale gold.

Be sure to dust them with icing sugar!
