White chocolate & Rolo cookies

Heres a little baking recipe that I tweaked to make the most yummy cookies ever!

Cookies are an easy, fun and delicious bake!! And are the perfect addition to a cosy winter evening!

PREP TIME: 25 minutes

CHILL TIME: 30 minutes

COOK TIME: 11 minutes

Makes 8-10 large cookies

(Can be stored for 4 weeks if frozen.)

YOU WILL NEED:

150g plain chocolate

100g self raising

flour

25g cocoa powder

75g softened butter

175g brown sugar

1 egg

1 tsp vanilla extract

50g white chocolate chunks

1 packet of Rolos

METHOD:

Preheat the oven to 180°C. Melt the chocolate in the microwave or in an bowl over a pan of simmering water. Set this aside to cool. Then, sift the flour and cocoa together.

Cream together butter and sugar untill light and fluffy. Beat in the egg and vanilla extract. Fold in the flour mixture and add the chocolate and mix thoroughly. Finally fold in the white chocolate chunks. Cover the bowl with cling film and chill for 30 minutes.

Grab 8-10 handfuls of the dough and place on a baking tray covered in parchment paper. (Make sure they are spaced far enough apart as they will spread!) Place a rolo into each cookie dough ball.

Bake for 11 minutes (after 11 minutes they wont look cooked but this is how you achieve a melt in the mouth finish!) Leave to cool.

Now, make a nice hot cup of cocoa and cosy up by the fire with a Christmas movie... enjoy!
